Coffee Chia Seed Pudding

Ingredients
3 Tbsp chia seeds
200 ml of coconut milk
100 ml of coconut milk to whip coconut cream or you can use store-bought coconut cream
2 tsp coffee powder
4 tsp of maple syrup or honey
Dark chocolate shavings

Instructions
To make coffee chia pudding, mix chia seeds, coconut milk, coffee, and maple syrup in a bowl and refrigerate overnight or for at least 4 hours.
Taste to adjust sweetness.
After taking it out from the fridge thin it down by adding 2 to 3 tbsp of coconut milk.
Spoon into personal-sized glassware or mason jar.
Layer your pudding with 2-3 tbsp whipped coconut cream for a creamier layer at the top. You can whip coconut cream using homemade coconut milk or you can use store-bought coconut cream.
Garnish with some shaved dark chocolate.
